Yubu Chobap

The counter's signature, and the reason most people come in. Seasoned rice pressed into a pocket of braised, sweetened fried tofu, then topped. Eaten with your hands, and it travels better than almost anything else in Koreatown — which is why it works as a lunch you carry back to a desk.

Yubu Chobap

Also called yubuchobap, Korean inari

The plain one, and the one to judge a yubu counter by. Yubu is fried tofu simmered in a sweet-savoury broth until it is soft enough to fold; chobap is seasoned rice. Together they are Korea's answer to inari — sweeter and more heavily seasoned than the Japanese version, and usually eaten as a meal rather than as one piece in a sushi set.

Bulgogi Yubu

Topped with bulgogi — thin-sliced beef marinated in soy, garlic, pear and sesame, then grilled hot and fast. It is the most widely known Korean dish outside Korea, and the most reliable thing to hand somebody who has never eaten yubu chobap before.

Salmon Yubu

Salmon over the rice pocket. The closest thing on the menu to a sushi order, and the one that most often wins over people who arrived expecting a sushi counter — the sweetness of the yubu does the job soy sauce would otherwise do.

Spicy Chicken Yubu

Chicken with Korean chilli. Gochujang heat is rounder and slower than the sharp front-of-the-mouth heat of a lot of other cuisines, and the sweet yubu underneath is a deliberate counterweight to it rather than an accident.

Tteokbokki

Also called ddeokbokki, Korean rice cakes

Cylinders of chewy rice cake in a sweet, spicy gochujang sauce. The definitive Korean street food — sold from carts all over Seoul, eaten year-round, and the dish most likely to be somebody's first Korean food memory. Ordered alongside yubu chobap rather than instead of it: one is cool and sweet, the other hot and spicy.
